Gourmet Chicken Penne with Fontinella Béchamel Sauce

The most wonderful time of the year aka Christmas is upon us.  The holiday season is one of my most favorite times of the year.  And not just because of the presents and my birthday either.

My love for Christmas stems from fond memories of family bonding while cooking holiday dishes in the kitchen with my mom and siblings.  My mom always went into full-on entertainment mode, hosting two dinner parties - one for her girlfriends and sisters and then another for the rest of our extended family.  So it's only natural that I inherited her love of entertaining. 


Of course, my favorite part of playing hostess is putting a gourmet spin on old classics or coming up with completely unique recipes of my own like my Gourmet Chicken Penne with  Fontinella Béchamel Sauce.  This dish is so delicious and is guaranteed to be a hit at your holiday gatherings.  Keep reading to get the recipe!

Kayem Foods: Helping The Carolina Panthers Win Off The Field




There's no denying this football season has been beyond great for the Carolina Panthers.  While the coaching staff and players have done a great job of winning fans over with their on-field performance, Kayem foods is helping the Carolina Panthers win off the field.  Kayem Foods and  the Carolina Panthers recently partnered together and Kayem is now the official brand of franks and sausages of the Carolina Panthers and Bank of America Stadium.




If you think we football fans don't play about our teams, we really don't mess around when it comes to our Game Day eats either.  One just cannot properly enjoy a football game without some good eats and in my family, plain ol' chips and salsa won't cut it.  My family enjoys eating "Real Food" meaning something with meat in it and that will stick to the belly.  So, I was delighted and a bit anxious when Kayem reached out to me to try out some of their products.  I had never heard of their brand before, but felt reassured that they had good products because down here in the South we know good food when taste it.   The Panthers know this and wouldn't possibly dare to serve their fans Kayem franks and sausages if they weren't up our Southern expectations.




The Carolina Panthers and Bank of America Stadium co-sign wasn't the only reason I decided to try out Kayem's.  As y'all know we are a household with many food allergies.  As mentioned above my family members are major meat eaters, but are also allergic to gluten.  Over the years I've learned to steer clear of prepared foods, even meats, because they have gluten and a host of over preservatives that we try to steer clear of.  When I learned that Kayem doesn't use fillers, MSG and their meats were gluten-free, I took it as a good sign. 


What I Received



Kayem Foods has a variety of franks and artisan sausages to choose from.  In addition to franks and sausages, they also make deli meats, beef patties, and buns.  Although not listed on their website, on a visit to my local Harris Teeter I learned that they sell Kayem Italian Style Meatballs as well.  Not sure if this product is getting discontinued, but stock up on them while you can!

For my taste-testing I selected the following products:

  • Kayem Artisan Pineapple Uncured Bacon Sausage, 12 oz
  • Kayem Artisan Andouille Sausage, 12 oz
  • Kayem Fire Grill Angus Beef Patties, 15 oz 

What I (We) Liked & Didn't Like

 Right out of the gate everyone loved the Artisan Andouille Sausage, especially Moo.  I was chopping up the sausage to add to one of her favorite soups that I make from scratch and she couldn't stop stealing pieces from the cutting board.  At one point I had to threaten her with a timeout to stop her from eating it all.  I snuck a few pieces too and can't say that blame her.  That sausage was delicious.

It was spicy without being too spicy.  It reminded me of my trips to New Orleans visiting with family.  Great andouille sausage is staple down there.  They use it in red beans and rice, gumbo, crawfish boils, etc.  Honestly, I didn't eat a lot of andouille sausage before I stayed in New Orleans.

This is definitely the one sausage you'll want to get for your sausage dogs or sausage hoagies.  It's also a great breakfast sausage if you fry it up with some fresh peppers, onion and serve over buttery grits.

If you not a big fan of pineapples then you will want to steer clear of their Artisan Pineapple Uncured Bacon Sausage.  In addition to chunks of pineapple, this sausage also has brown sugar and maple syrup giving it a tangy sweet taste if eaten alone as a sausage dog.  Moo was not a big fan of the "sweet sausage" as she called it, at least not eating it by itself.  However, once paired with the Andouille and mixed into the soup, she came to love it 

I honestly didn't mind the taste.  But then again I'm a fan of putting maple syrup on my sausage.  I choose to crisp my sausage before adding it the soup and I loved how the sugars from the pineapple, syrup and brown sugar helped to make a nice sweet crust on the sausage chunks I diced.  I'll definitely purchase this again and see what other dishes I can use it in.

Before I talk about the beef patties, I want to let all of my Queen City folks know that these have not yet unrolled in our Harris Teeters.  I'm also not sure if they ever will, but we are really, really, REALLY hoping that will soon!  When I say Kayem Foods knows how to craft the perfect precooked beef patties, I mean they know beef and how to use the grill!!  Y'all may remember that we only eat beef and red meats maybe once a month or every other month.  However, I will confess that after trying these Fire Grilled Angus Beef Patties, we were ready to toss that habit out the window and start eating these everyday.

 These beef patties were juicy, tender, and grilled and seasoned to perfection.  Seriously, I've never had a store-bought beef patties that I haven't had to re-season myself because the seasoning wasn't up to par until I tried Kayem's.  We loved that these come pre-grilled because our package arrived the weekend of our first snow of the New Year and the scrumptious aromas that floated out of the pan as I cooked these had us feeling like we were having an indoor cookout.  Yes, we got transported right to summer.

If there was a scratch-and-smell button that I could have used, I would have tweeted y'all a sniff.   And God was looking out because each bag comes with 5 patties, but somehow ours came with 6.  From the first to the last bite we communicated in a series of "Mmms", "Noms" and sighs because these are just that good.  Seriously, I argued with my seven year old over who was getting the last patty.  We decided to split it. (Kayem Foods when you read this, please consider rolling out your patties to Charlotte, NC and Panthers please consider getting these as well to serve at the Bank of America Stadium!)

What I Made



Because our Winter weather had finally came in and we had gotten some snow earlier that weekend, I decided to make a Game Day and Moo's favorite soup- Pea Soup.  However, I put a twist on it by adding the sausages.  I served it over white rice and topped it with gluten-free herb croutons and added some cheese to mine.  The recipe is really easy to make and doesn't take that long to prepare or cook.  

I would suggest though that you soak your split peas overnight though as this helps to speed up cooking time.  You save the recipe printable below.



Since the beef patties were perfectly seasoned, the kids had patties on gluten-free bun with tomato and for myself I added cole slaw made here in NC (gotta support local businesses/brands), onion and a few squirts of ketchup aka my version of a lite Carolina Burger.



Overall, we were more than satisfied with our first experience of enjoying Kayem Foods products.  I do recommend that you visit their website to see if any of the stores near you sell any of their products and give them a try for yourself.

Frosted Pecan Faux Doughnuts





Thanksgiving is steadily approaching.  Earlier this week, I shared my unofficial Thanksgiving dinner menu and mentioned that we would be having Pillsbury Crescent Rolls.  Well I got to thinking about how I could transform those crescent rolls into a tasty holiday treat.  Behold my Frosted Pecan Faux Doughnuts were born!

They're the perfect sweet holiday treat.  While I do enjoy cooking from scratch, making doughnuts from scratch can be time consuming.  The last thing I want is to be stuck in the kitchen longer than I have to be for Thanksgiving.  Pillsbury's Original Crescent Rolls are make a wonderful, easy and delicious substitute for doughnut dough.   

Most importantly it will cut down on my time in the kitchen and maximize my time around the dinner table with my family. I hope you all enjoy this recipe.  Check it out below and be sure to share it with your friends.


Ingredients

2 cans of Pillsbury Original Crescent rolls (each can makes 4 doughnuts)
1 can  of Pillsbury Funfetti Icing with Sprinklers
1 can of Fisher Ice Cream Toppers Cinnamon Pecans
Vegetable Oil

Directions

In a medium sauce pan heat vegetable oil to 350 degrees on medium to medium-high heat.  While oil is heating place sprinklers, half of frosting and cinnamon pecans into separate dipping containers.  Then, open crescent rolls and roll out each sheet on a lightly floured surface.  You will notice that each sheet has eight triangles.  

Break the triangles into groups of twos.  You should have four rectangles made of two triangles for each can of crescent rolls.  Pinch together the perforated seams of each rectangle.  Then roll each rectangle into a tube.  Pinch together ends of your dough tubes like the picture below to form your doughnut.




Once the oil is heated, drop in one doughnut at a time.  Brown lightly on each side.  Be sure to watch your Pillsbury Crescent Roll doughnuts as they will brown quickly and could burn.  Turn down the heat if yours start to brown too fast.  Once your doughnuts are browned on both sides drain on a wire baking rack or plate covered with paper towels or a brown lunch bag.

When all of your doughnuts are finished, dip each into the icing, followed by the sprinkles and then the cinnamon pecans.  If you have a nut allergy, feel free to leave off the nuts.  You can substitute with crispy bacon, crunched pumpkin seeds or whatever your favorite crunchy holiday dessert topping is.

Stuffed #OEPGameDay Tacos




Game Day was a huge deal in my family growing up.  Not only is the majority of my extended family males, but my parents were (and still are) die hard Dallas Cowboys fans.  I have so many fond memories of watching football games while sharing laughs and breaking bread with my aunts, uncles and cousins.  Now that I have my own family and my own team (Go Patriots!) to root for (sorry Mom), I'm creating new memories starting with creating my own #GameDayFavorites in the kitchen.



When it comes to #GameDayFavorites, I like eats that are quick and easy to prepare, but still delicious to eat.  Trust me, hungry football watcher and rivalry teams do NOT mix!  So, you don't want to keep your guests waiting for food because emotions will bubble over.  Thankfully, my Stuffed #OEPGameDay Tacos with avocado ranch sauce are not only quick and easy, but yummy too!

The first thing I did was run to my local Publix to pick up some Old El Paso Hard & Soft Taco Dinner Kits and an avocado.  Of course, I had my $0.75 off 1 Old El Paso Taco Boat Tortillas or Old El Paso Dinner Kits coupon (coupon available Oct 1st - Oct 30th) handy.  You can print yours here.  The rest of the ingredients I already had on hand in the frig. Also, your Old El Paso Dinner Kit not only comes with your taco shells, but your meat seasoning packet and taco sauce!




Ingredients

Old El Paso Hard & Soft Taco Dinner Kit (1 per group of 3)
2 lbs of Ground Turkey
1 Bag of Shredded Cheese, Mexican Blend
1/2 Head of Lettuce, shredded
1 Cup of Frozen Corn

Sauce
1 Avocado, chopped
1 Cup of Ranch Dressing


Directions

In a food processor or blender, combine the avocado and ranch dressing.  Blend until smooth.  Taste and feel free to add more ranch dressing if needed or until you get the desired taste balance that you prefer.  Your sauce should look roughly like the picture of mine below.  Refrigerate until tacos are done.


In a skillet, I brown the ground turkey on medium-high heat.  Then I drain the turkey when it's done browning.  Next, I add in the frozen corn and seasoning packet from my dinner kit and simmer on low heat until corn is warm.

I preheat my oven to 250 degrees while I wait.  Once the meat base for the tacos is completely done, I warm up the hard taco shells under the oven for about a minute.  I stuff the shells with the meat base, sprinkle on some cheese (optional) and a little lettuce.

For the soft tacos, I mix in cheese, a few tablespoons of the avocado ranch sauce, and some lettuce.  Next, I scoop the filling into the soft tacos.  Once I have my soft tacos filled and folded, I heat up a medium skillet and using non-stick spray, I brown the tortillas on both sides.  Don't worry if some of the filling comes out when you flip them.

Once both sides of the tortillas are browned, I cut each individual soft taco into halves to create soft taco bites!  Genius right?!  Place the hard and soft tacos in your favorite serving dish and serve with taco sauce from the dinner kit and the remaining avocado ranch sauce.  And there you have it, Game Day tacos two ways using one Old El Paso dinner kit!

5-Ingredient Gluten-Free Cheesy Spaghetti Recipe



I've always been a fan of spaghetti it comes three of my favorite foods- pasta, ground turkey and tomatoes.  When I found out about the kids' gluten allergy, I thought for sure I would have to give up my favorite Italian dish.  Thankfully, food has come a long way and brands like Hunt's (and Kraft) understand that the struggle is real for those of us on gluten-free diets.  After some experimenting I'm proud to share my 5-Ingredient Gluten-Free Cheesy Spaghetti recipe as part of the Publix Flavor Excursion campaign. 





Before we hop into this recipe, I would like to disclose that I always season my ground turkey with my own special blend of Italian seasonings anywhere from 3 to 24 hours prior to making this dish.  Of course, you're free to skip this step and tweak this recipe anyway that you see fit.  Also, if you're allergic to dairy or lactose intolerant you can totally use your favorite non-dairy cheese as a substitute.  Now that we have that out of the way let's get to the recipe!

Ingredients

1  28oz can of Hunt's crushed tomatoes with basil
1 pound ground turkey
1/4 cup parsley, chopped
1 cup Kraft natural shredded Mexican style four cheese (or substitute)
1 12oz box of gluten-free spaghetti noodles




Directions

In a medium skillet brown ground turkey until done.  Drain fat/juices.  Then mix in Hunt's crushed tomatoes with basil and let simmer on low heat to create a meat sauce.

While the ground turkey is simmering cook gluten-free spaghetti pasta according to package directions.  Drain water and plate noodles once done.

Top spaghetti pasta with meat sauce.  Next sprinkle on a fine layer of Kraft natural shredded Mexican style four cheese blend.  Follow that with a few pinches of chopped parsley.  Top with another light layer of cheese and serve!

Food Lion Frugal Cook-off

I'm not going to lie, I am a bit nervous about this event.  Cooking in your kitchen for the people you love is much easier than cooking for a judging panel, Food Lion reps and in front of a room full of strangers.  Not to mention, there will be cameras rolling!  We're all feeling the pressure to put our best foot, or should I say feet forward.

NoGii Vanilla Banana Protein Smoothie Recipe

Honey Glazed & Italian Breaded Baked Pork Chops



I have to admit the Mr and I don't get out for date nights much.  Thus, we have become more of the date night in sort of couple.  My husband gets to show off his awesome movie picking skills.  I get to show off my superb cooking skills by transforming an average week night meal into a date night worthy feast.  This week I made Honey Glazed & Italian Breaded Baked Pork Chops using Progresso Bread Crumbs.  Check out the recipe below.





Ingredients
4 pork chops
1/2 cup Progresso Italian bread crumbs
1/4 cup honey
salt (optional)
pepper (optional)



Directions

1. Preheat oven to 375 degrees and gather ingredients.



2. Using a sauce brush, cover both sides of each pork chops with a light coating of honey.  You can season with salt and pepper before brushing with honey if desired.



3. Pour bread crumbs into a shallow dish.  Place pork chops on top of bread crumbs and shake lightly using a back and forth motion.  Flip and shake again to bread other side.  Repeat until both sides are evenly breaded.



4. Place breaded pork chops on to a foil lined pan (easy clean up).  Bake for 30-40 minutes.  Flip halfway through cooking progress.



5. Let rest for 5 minutes before serving.

See how the honey caramelized with the bread crumbs in certain spots?  Yummy goodness I y'all.!

Using the Salad Swap app and website, I have been able to check out all of the different salads I can create and swap out regular meals for.  Let me tell y'all, the possibilities are endless.  We are on Day 20 and haven't gotten tired of salad yet!  We've been alternating between swapping a regular lunch or dinner meal for one of the salad creations.  So, if we had a Caesar salad on Monday for lunch and Tuesday, we had my favorite, taco salads for dinner.  Check out the recipe below.



Ingredients
1 bag of Fresh Express Premium Romaine salad mix
1 bag of tortilla chips (fat free or organic if possible)
1 bag of Mexican (or soy) cheese blend
1 jar of salsa
1 pack of ground turkey

Instructions
1- Brown turkey in a pan using medium to medium-high heat.
2- While turkey is browning, preheat oven to 300 degrees.
3- When turkey is almost completely browned, heat tortilla chips in the oven for 2-5 minutes.  Drain turkey and return to pan with the heat off.
4- Arrange 15-20 tortilla chips to cover the bottom of each plate.  Top with a handful of roughly chopped Fresh Express salad mix (I just used my hands and broke apart the lettuce a little bit).  Next sprinkle on a 1/3 cup of ground turkey.  Finish off with 1/4 cup of shredded cheese and 1 1/2 tablespoons of salsa.

There you have it, a yummy meal under 600 calories.  This meal was a total of  roughly $18 with taxes (salad $2.99, cheese $2.50, salsa $2, ground turkey $7, and tortilla chips $2) to make and we had leftovers that will be used for lunch.  So, that's a little of over $2 per person each day!  Much cheaper than eating out.

Savory BBQ Meatballs Recipe

Although, my Patriots didn't make it to the SuperBowl this year, the Mr's 49ers did.  Of course, we had to plan a menu to celebrate.  And sadly, they didn't win.  They did put up a good fight though.  Anyways, we had wings, chips with dip, crescent rolls, bbq meatballs and a homemade punch.

So, I thought I'd share the recipe for my savory bbq meatballs with you all.  These are great appetizers for pretty much any kind of party or get together.  This possible one of the easiest recipes you'll ever make.  Seriously it's foolproof!



Ingredients
2 39oz bottles Kraft Original Slow Simmered Barbecue Sauce (or your favorite brand)
2 bags FarmRich Italian Meatballs
1 jar Grape Jelly

Directions 
In a crockpot (or large sauce pot) combine all ingredients.
Set to low heat and let simmer for 3 to 4 hours or cook on high heat (medium heat if using sauce pot on stove) for 1.5 to 2 hours.
Stir every hour to help mix in jelly as it melts.

Yep, it's as simple as that.  And they taste amazing!  You can make your own meatballs from scratch (hamburger, 1/2 cup bread crumbs & 1 egg) or use any other brand that you like.  Either way this recipe is sure to be a hit!

Empanadas Galore

So, here I was earlier today debating out loud what I was going to make for dinner.  Before I had kids making meal plans was easy because it was just me and the Mr.  However, these days it's a little bit tricky.  Moo has been going through a picky eater stage.  JJ will only eat certain meats cooked a certain way.  Plus, you have to factor in food allergies.

It can be a bit of a headache trying to make a menu based around what you think everybody is going to want to eat.  Anyways, it's going on 4 o'clock and I haven't taken anything out of the freezer to defrost.  Then the Mr comes into the kitchen and tells me about this new empanada recipe he saw on tv.  I was a little skeptical at first because he's cooking shows and I wasn't completely certain if had REALLY seen the recipe on a cooking show or not.   And if anybody who knows me knows that I all about Mexican cuisine. 

Well, tonight I gave the recipe a try and it was a success.  Such a success in fact, that I've decided to get on YUMMommy at 11 o'clock in the night to share it with you.  I would have typed this post up early but JJ is still sick and has been cranky, then Moo needed her one on one time and I had to put both kids to sleep.  But better late than never.  We made tons of empanadas tonight. Pictured below is what we're going to call the M Family Mucho Grande Empanada!



Ingredients
2 cans of Pillsbury Grand Biscuits
Ground beef/turkey/chicken, cooked
Chunky salsa
Mexican blend shredded cheese
Flour
1 egg beaten
Nonstick spray

Directions
Preheat oven to 350 degrees.

In a medium bowl mix together cooked ground beef, one can of salsa and two large handfuls of shredded cheese.

Next, dust a flat surface with flour and flatten out two biscuits using your hand (or rolling pin if you must).  Make sure they are about 5-6 inches in diameter.

Then, add filling to center of one biscuit.  Make sure to leave the edges clear of filling.

Take beaten egg and coat edges of the biscuit.  Once finished, lay the second biscuit on top and seal edges together using fingers or a fork.

Coat baking dish or cookie sheet with nonstick spray, add empanadas and bake until biscuits are golden brown (about 15 minutes).

Let cool for 2 minutes, serve and enjoy!

Love Biscuits Recipe


With Christmas a little under 48 hours away, many of us are getting ready to welcome or have already welcomed out of town guests.  So, I thought that would share my recipe for my Love Biscuits with you all.  These will be perfect serve for breakfast or you can even make them to pair with your Christmas dinner.  Either way, they are sure to be a hit.  Plus, they're very simple to make.  

Ingredients
2 cups Flour
1 tsp Sugar
1 tbsp Baking Powder
1 tsp Salt
8 tbsp softened Butter
3/4 cup milk (soy works well too)
Nonstick spray


Directions
Preheat oven to 350 degrees. 
In a large bowl, add flour, sugar, baking powder and salt.  Then using your hands mix in butter.
Batter should start to look crumples.  Add in milk and mix well with hands.
Dust a flat surface (counter or cutting board) with a light coating of flour and roll out dough to desired thickness or 1/2 inch.
Using a cookie cutter or knife cut out heart shaped biscuits and place on cookie sheet sprayed with nonstick spray.
Bake for 15 to 20 minutes or until lightly golden brown.
Brush tops with butter and serve as desired!

I hope that you all enjoy this recipe.  The biscuits come out so nice and light.  And I call them Love Biscuits because of the shape and the fact that they're made with love of course!
